Was down with a cold + sore throat 2 days ago. Am feeling better but I didn't study at all yesterday cause I had a headache along with the flu bug.
Currently trying to make up for lost time (yea, I am totally doing that by blogging...XD)
ANYWAYS, I bought both of David Choi's albums off iTunes and am loving it so far! It's really good studying music cause you don't get distracted by the beats/lyrics. =D
Made creamy corn + shredded chicken soup for dinner on Thursday cause I was too sick to cook anything proper, and was craving the same soup my homestay used to make during winter. It's so easy and extremely yummy. Great for cold winters or rainy days...Here's a quick recipe:
Serves: 3 as a main course/6 as a side
Ingredients:
3 cloves Garlic, peeled
1/2 Onion, thinly sliced or chopped
2 tbsp Butter
3 tbsp All purpose flour (more if you like a thicker soup)
1 can Sweet Corn Kernels ~310g
1 can Creamed Corn ~310g
1/4 Roast Chicken (breast part is better), shredded*
2 3/4 cups Reduced Salt Chicken Stock*
1 cup Water
250ml Milk
Salt and Pepper to taste.
Steps:
1) Saute onion and garlic in butter over medium heat till soft but not browned.
2) Add flour and stir till throughly mixed.
3) Add in water, chicken stock and shredded chicken allow to simmer (not boil) for about 8 minutes.
4) Add corn kernels, creamed corn and milk. Simmer for another 10 minutes.
5) Add salt and pepper to taste, continue to simmer till it thickens abit.
6) Serve with crusty bread or garlic toast. Garnish with parsley flakes if desired.
Notes:
- I bought Coles roast chicken and shredded the breast parts by hand. Just take it and pull it apart...I trust you know how to do that. It's okay to throw some skin in too.
- Instead of roast chicken, you can also steam/pan fry chicken breasts and shred it, or just slice some chicken breast and fry it together with the onion and garlic in step 1.
- You can use 2 3/4 cups of water + 2 chicken boullion cubes instead of 2 3/4cups of chicken stock.

Yes yes, an extremely late post. Hmmm, I have been slack about blogging, ever since Phoenix and I got together, amongst other things which doesn't include studying~
Hmm, I managed to lose weight and have been keeping if off (despite munching pizzas at the Pizza Cafe where we study) after being committed to Fitness First! Yes, it's not much but I am happy~
And of course good things never last...Just as I am convinced/determined to hit the gym thrice a week, BAM! I am hit with what I think is a strained back. It's like a radiating electric spasm/shock thing that goes from my right hip to mid thigh area. Been 2 days, and I reckon I will be booking in an appointment to see a doc soon.
I am definitely not going to the St.Lucia Health Services after a really retarded misdiagnosis the last time I was there. They just kept assuming that I am either pregnant or have some STI. 0.o"...AND I was suffering from the symptoms; tummy problems, lack of appetite, nausea, diarrhoea and dizziness! Had to test my pee and blood only to find out that they don't know what's wrong with me.
ANYWAYS, the rest of the trip to Byron Bay, NSW! In pictures of course~
So the next morning we checked out and it was sand, sea, sky, rainforest + falls + waterfall through hole in glow worm cave, bad attempts at glowworm photos (springbrook) and back to Bris through GC!
Ha, Phoenix had to drive across this bridge like...3 times before I could take a picture. It's wooden! Held together by nails and meant for cars!

No, this is not an advert for 3 mobile~ And no, glow worms do not look like the number 3. I just happen to lack a tripod and gained shaky arms even if image stabiliser on because of the super long exposure. (Imagine holding a camera dead still for like...30secs)
And why am I up so early? Well, I haven't slept yet, thanks to the strained back. Can't seem to find a comfy position to fall asleep. Maybe when I am too tired I won't feel a thing, but for now, Mousehunt and Microbiology shall go hand-in-hand.
